O RETETA SIMPLA

I’m always looking for dinner ideas when it comes to feed the baby. Most of the times I just wish to avoid the classic bread, butter & jam. That’s his breakfast, especially when he doesn’t want to eat.

I decided to give him quinoa, but I had to find a delicious recipe to make sure he would eat. After a little research, I found the “Cheesy Quinoa”, which is an alternative to the classic mac & cheese.

Because I use a small pot, I adjusted the quantities from the original recipe. I’m not a fan of food wasting and I’d rather cook enough for just one meal.

We need the following ingredients: 

  • 1 pack of cream cheese;
  • 1/4 cup grated mozzarella or parmesan;
  • 1/4 cup grated cheddar;
  • 1/2 cup of quinoa;

How to cook quinoa:

I put water in a pot to boil. When the water is boiled, I add the quinoa then I leave it in the hot water for 15 minutes or so. Then I put the quinoa in a drain sieve. After it’s drained, I mix it with the cream cheese, parmesan & cheddar.

I put the mix in the oven at 180° for 15 minutes. The final result is tasty and mom can eat the rest :)
